Green Tea & Pineapple Smoothie

A little over a month ago I stopped drinking coffee. Such a bummer, I know (especially since we just a new espresso machine when we renovated our kitchen and created a whole “coffee station” for it). I have a feeling I may be back to coffee soon. But in the meantime, I’ve been on a huge tea kick. Especially green tea. I find green tea to be much gentler on my digestive system and my nervous system (no more afternoon crashes either).

And I’m really beginning to love the taste as well. It took me a week or two, but now I wake up craving green tea (this is the one I drink and love). So last week when we went to the One & Only Palmilla in Cabo San Lucas I was sooo excited to see that they had a smoothie using GREN TEA!  And my other newest obsession in the mornings, PINEAPPLE.

I think I had this smoothie at least once a day (if not twice).  There was just somethign so refreshing about it.  I don’t know if it was the green tea, the mint & cinlatro, or the fact that the sun was shinning down on that beautiful blue ocean – either way, I fell in love with this drink and knew I had to recreate it when I got home. 

And while my kitchen may not be full service, or near beautiful blue crystal water, or be filled with tranquil peace – this smoothie still tastes just as good (well….alsmost).

I used a combination of green tea, pineapple, ginger, coconut water and a little (or a lot) of cilantro and mint.  Don’t overthinink the cilantro in a smoothie….it adds just a really nice herbal element that is needed with the sweet pineapple.

I promise you’ll love it….and if you close your eyes, get near a window with a hint of sun and swear you can almost hear the sound of the ocean.

Green Tea & Pineapple Smoothie

Serves: 2 servings
Ingredients
  • One handful of ice
  • 2 cups of pineapple
  • 1 cup of green tea (cooled)
  • 1 cup of coconut water
  • about a TBSP of ginger (roughly chopped)
  • a handful of mint and cilantro (add a little more than you think, the extra herbs are amazing in here)
Instructions
  1. In a high speed blender, add the ice, pineapple, tea, coconut water and ginger. Blend until a beautiful smooth "slush" comes together. Adding a little more liquid as needed.
  2. Then add the handful of fresh herbs and blend for an additional 15-30 seconds (don't over blend the herbs).
  3. Serve and enjoy!
